Russ Sonnier and David Castle met while cooking in the kitchens of New York caterer Glorious Food. After a seven-year stint on opposites sides of the continent, David in California cooking for the La Jolla elite and Russ as private chef to banker Henry Kravis, the two decided to reunite and start their own company, Sonnier & Castle in 1997.
Russ and David saw that there was a need for a fresh approach to catering. As they were both chefs, they understood the value of a customized approach to menus and food that compliments the event. By fusing updated classics with international flavors, they created menus that were distinctive and unique. As New Yorkers, they were always on the cutting edge of style and service.
Joined by executive chef Robb Garceau in 2000, the full team was now in place. Garceau, who studied at the New England Culinary Institute, perfected his palette cooking at New York restaurants, Vong and Jean-Georges under the direction of Jean-Georges Vongerichten.
